They're "granulated", which means your 1/3 lb patty's cut from a massive column of blended Angus brisket, short rib, and chuck, before it's seared in beef fat, and served w/ jack cheese, caramelized onions, and caper aioli on a griddled Acme bun; if you're smart, you won't know they're also doin' fries and veggie burgers, because by now you're half way to Duc Loi. Eat Again: Pizzeria Avellino 2769 Lombard St, at Lyon; The Marina; 415.776.2500 In the old Curbside space, Avellino's tiny and plenty nice (black two tops, spherical hanging lamps, etc), and serves both NY style pizza by the slice/pie, and whole 'zas of rustic Napoletana with pesto/tomato sauce done up with topping combos ranging from prosciutto/red onion/gorgonzola to spinach/kalamata olives/cherry tomatoes/feta/pine nuts. It's run by a couple of IT guys with day jobs who just love pizza...like all IT guys...that's what you're thinking, right? You're part of the problem.
